Ever wish you had time to make meals, but your schedule simply does not allow for hours of food prep? Then this mini food series is for you! Each week, I’ll post a new recipe starring canned food + spices + fresh meat. The preparation for each meal will be so minimal or nonexistent that you may stand over your crockpot wondering, “Did I miss a step? Or was it really that easy?”
#iCANcook (and you can too!)
Kitchen tools needed: crockpot, can opener, flexible spatula, measuring spoons (optional colander for draining)
Ingredients:
6-8 turkey sausages of your choice (Italian works great!)
1 can fire roasted tomatoes (15 oz)
1 can diced green chilies (4 oz)
1/2 jar chef-cut roasted red pepper, drained* (12 oz – use approx 6 oz)
1 tsp dried minced onion
1 tsp garlic powder
sprinkle of red pepper flakes (optional)
*My local Wegmans has chef-cut roasted peppers, and they’re a lifesaver! If you can’t find chef-cut peppers, just plan to dirty a cutting board and knife to slice the pepper halves into bite-sized pieces.
Instructions:
Arrange sausages in bottom of crockpot. Top with peppers and tomatoes. Sprinkle spices on top of sauce; toss with spatula to combine and make sure sausages are covered with sauce. Cook on low for 4-6 hours.
Serve in buns or just eat with a fork! Serves 6-8.
**Party Potential tip: Double the recipe easily by using the whole jar of red pepper, and two cans of the other ingredients! Since the sauce goes a long way, a doubled sauce recipe would be sufficient for 12-16 sausages!
