2 cups cubed sweet potato or butternut
1 can garbanzo beans, drained
1/4 cup fresh cilantro, chopped
1/3 cup red quinoa, rinsed
2 1/2 cups vegetable broth
2 garlic cloves, minced
2 cups torn spinach or kale
1.5 tbsp red curry powder
1/2 tsp paprika
Sprinkle red pepper flakes
Sprinkle cayenne
Add all ingredients except spinach and quinoa to crockpot. Stir and cook on low for 3 hours. Add quinoa and turn to high; cook for 1 to 2 hours, or until quinoa is at desired softness. Stir in greens and cook for 5 to 10 minutes until darkened and wilted.
