Ever wish you had time to make meals, but your schedule simply does not allow for hours of food prep? Then this mini food series is for you! Each week this October, I’ll post a new recipe starring canned food + spices + fresh meat. The preparation for each meal will be so minimal or nonexistent that you may stand over your crockpot wondering, “Did I miss a step? Or was it really that easy?”

Kitchen tools needed: skillet, nonstick spatula, slotted spoon, can opener, colander, measuring spoon, measuring cup
1 lb package turkey sausage, browned*
2 15-oz cans white beans, drained and rinsed
2 15-oz cans petite diced tomatoes
2 4.5-oz cans green chilies
2 cups vegetable stock/broth
1 tsp Italian seasoning
1 tsp dried minced onion
1 tsp garlic powder
*Brown turkey sausage in a skillet with olive oil on the stovetop on low/med, stirring with sturdy nonstick spatula and breaking into bite-size pieces as it cooks. (I timed myself; this took me 9 minutes from unpackaging the meat to scooping it into the crockpot.)
Use a slotted spoon to add cooked turkey sausage to crockpot, leaving the grease in the skillet. Add beans, tomatoes, chilies, liquid, and spices; stir to combine. Cook on low for 4-6 hours.
Serve topped with cheese or nonfat plain Greek yogurt. Serves 6-8.
