Tropical Salsa Chicken

1/2 pineapple, cubed (I prefer fresh)
4 chicken breasts, cut into 2″ strips or cubes
2 cups fresh salsa
1/4 cup chili lime hot sauce (I prefer the Cholula brand)
(optional) 1 cup fresh vegetables (green beans, broccoli, bell peppers, etc)

Mix chicken, vegetables, salsa, and hot sauce in crock pot. Top with pineapple chunks. Cook on low for 4-6 hours, or until chicken and vegetables are cooked.

Cilantro Lime Quinoa
1 cup white quinoa, rinsed
1 3/4 cup water
1 chicken bouillon cube
2 Tbsp fresh cilantro
1 lime squeezed
(optional) chili lime hot sauce, to taste preference

Cook quinoa in water with chicken bouillon cube. Once about half the water is absorbed, stir in cilantro, lime juice, and hot sauce. Allow quinoa to cook until all liquid is absorbed.

Serve chicken and pineapple over the quinoa.
