Buffalo Chicken Chili



1 1/2 cup cooked chicken, shredded or cubed (OR cooked ground chicken/turkey*)
1 can fire roasted tomatoes
1 can great northern beans
1 cup chicken stock
1/2 onion diced
2 garlic cloves, minced
1 cup frozen corn
2 celery stalks, diced
1/4 cup blue cheese Greek yogurt dressing (I recommend Bolthouse)**
1/4 cup buffalo sauce
1 packet ranch dressing mix
sprinkle of dried cilantro

*if you use ground chicken or ground turkey, add the onion and garlic while browning the meat

**if you can’t find blue cheese Greek yogurt dressing, substitute 1/4 cup nonfat plain Greek yogurt and 2 Tbsp crumbled blue cheese

Add all ingredients to crockpot and cook on low for 4-6 hours, or until warmed through. Top with additional blue cheese dressing or cheddar, if desired.

Serves 4-5
