I call this soup “Amigo Soup” because of its Mexican flavor and the ingredient “friends” that pair so deliciously together. I have the ingredients wittingly listed in pairs – flavors and textures that complement each other in this dish!
This is such an easy throw-together recipe and freezes well, so it’s a great meal to share with one of your amigos! See the instructions at the end for how to transform it into a freezer meal.
1 chicken breast, cooked (approx 1-2 cup)
1/2 lb ground turkey
1/2 med onion, diced
2 cloves minced garlic
1 can black beans, drained
1 can white beans, drained
1 cup salsa verde
1 cup fresh salsa
1 cup frozen corn
1/4 cup uncooked white quinoa
1/4 cup roasted red pepper, diced
1 jalapeno, seeded and diced
4 cups chicken stock
1 taco seasoning packet
Cook turkey, onion, and garlic in a frying pan until turkey is browned and onion is clear.
Combine cooked turkey and all other ingredients in crockpot*. Cook on low for 4-6 hours or on high for 3-4 hours.
*If opting for freezer meals, do not add chicken stock prior to freezing, and write “add 4 cup chicken stock” on freezer bag, along with the crockpot instructions.
