Apple Chicken Salad


2-3 boneless chicken breasts, cut into 2-3″ pieces
2 apples – cored, skinned, and cubed – separated
1/2 small sweet onion, diced
1 tsp cinnamon

1/3 cup dried cranberries
1/3 cup cashew pieces
1/3 cup apple butter*

Add chicken, half of the cubed apple (approx 1 apple’s worth), onion, and cinnamon to crockpot. Stir to combine. Cook on low for 3-5 hours, or until chicken is cooked.

Cut chicken into smaller cubes, return to crockpot to absorb liquid. Stir in remaining raw apple (again approx 1 apple’s worth), cranberries, cashew pieces, and apple butter. Can be served warm or chilled in a pita.

Serves 4.

*If you cannot find apple butter, do not despair! Use 1/3 cup unsweetened apple sauce + 1/4 tsp cinnamon + sprinkle of ground clove + drizzle of honey.
